Ingredients

  • 2/3 cup fish stock - See note below
  • 8 sole fillets
  • 1 Tblsp olive oil
  • 1Tbsp butter
  • 4 shallots - finely chopped
  • 3 1/2 oz baby button mushrooms - cleaned & halved
  • 1 Tblsp peppercorns - lightly crushed
  • 1/3 cup marsala
  • 2/3 pint heavy cream
