Roasted Chicken Enchiladas With Poblano Sour Cream Sauce Recipe

Ingredients

  • 4 flour tortillas, preferably homemade
  • 2 cups organic monterey jack cheese & sharp white cheddar cheese, shredded and mixed together, divided
  • Roast Chicken:
  • 1/2 of an organic whole chicken
  • olive oil
  • seasonings: kosher salt & freshly ground pepper, chipotle powder, cumin, garlic powder
  • sour cream Poblano Sauce:
  • 4 tablespoons unsalted butter
  • 1 small onion, finely chopped
  • ground cumin, to taste
  • 1/2 cup all purpose flour
  • dripping from roasted chicken
  • 2 cups water
  • 1 cup light sour cream
  • 2 large fresh poblano chiles, roasted peeled seeds removed and diced
  • fresh cilantro, if desired
