- seasonings: kosher salt & freshly ground pepper, chipotle powder, cumin, garlic powder
- sour cream Poblano Sauce:
- 4 tablespoons unsalted butter
- 1 small onion, finely chopped
- ground cumin, to taste
- 1/2 cup all purpose flour
- dripping from roasted chicken
- 2 cups water
- 1 cup light sour cream
- 2 large fresh poblano chiles, roasted peeled seeds removed and diced
- fresh cilantro, if desired
