- 3lbs boneless, skinless chicken
- 1 red onion, chopped
- 2 bell peppers, chopped
- 16oz water chestnuts, sliced and undrained
- about 2 cups shredded cabbage
- juice from 2 lemons
- 1T red wine or rice vinegar
- about 24oz canned tropical fruit blend, in it's own juices, not syrup(can sub a can of pineapple and something like mandarin oranges, if necessary, but try to find a blend with papaya, mango, passionfruit, etc)
- 6 cloves garlic, minced
- 1T worcestershire sauce
- 1T soy sauce
- 1T fish sauce
- 1T garlic chili sauce/paste
- 1/2-3t red pepper flakes
- 2t ground coriander
- fresh ground pepper and kosher or sea salt, if needed
