- 3 large eggs (5.25 ounces, without the shells)
- 3 large egg yolks (2 ounces)
- 1 1/2 teaspoons vanilla extract
- 1 1/2 teaspoons water
- 1/2 teaspoon table salt
- 1 1/2 cups cake flour (7 ounces)
- Variation: ginger POUND cake (Beat in ingredients during step 3 when adding in salt)
- 3 tablespoons minced crystallized ginger
- 1 1/2 teaspoons ground ginger
- 1/2 teaspoon mace
- Variation: rose water POUND cake (Beat in ingredients during step 3 when adding in salt)
- Omit vanilla and add 1 tablespoon rosewater
- and 1/2 teaspoon mace (ground)
- Variation: SEEDED POUND cake (Beat in ingredients during step 3 when adding in salt)
- 1 tablespoon anise seed , ground
- 1/2 teaspoon caraway seed , ground
