Ingredients
- For the pork marinade :
- 1 sprig rosemary
- 3 sage leaves ( Salvia)
- 1 fresh Bay Leaf
- 6 black peppercorns
- juice of 1/2 blood orange ( there are in season now here in Italy)
- 1 tbs olive oil
- 3 cloves garlic
- 1/2 tbs thyme
- juice of 1/2 lemon
- 1/4 cup dry white wine
- 2 pork tenderloins
- salt to taste

- For the eggplant and Zuccini Balsamic
- 3 tbs of high quality balsamic vinegar
- 1 eggplant
- 1 zucchini
- 1 onion
- 1/2 tbs oregano
- 1 tbs paprika dolce powder ( sweet paprika)
- 1/2 fresh tomoato
- 3 tbs peccorino or parmesan cheese
- 4 leaves of fresh basil
- 1 tbs of olive oil
- salt to taste
