Grilled Pork Tenderlion With Balsamic Eggplant And Zucchini Recipe

Ingredients

  • For the pork marinade :
  • 1 sprig rosemary
  • 3 sage leaves ( Salvia)
  • 1 fresh Bay Leaf
  • 6 black peppercorns
  • juice of 1/2 blood orange ( there are in season now here in Italy)
  • 1 tbs olive oil
  • 3 cloves garlic
  • 1/2 tbs thyme
  • juice of 1/2 lemon
  • 1/4 cup dry white wine
  • 2 pork tenderloins
  • salt to taste

  • For the eggplant and Zuccini Balsamic
  • 3 tbs of high quality balsamic vinegar
  • 1 eggplant
  • 1 zucchini
  • 1 onion
  • 1/2 tbs oregano
  • 1 tbs paprika dolce powder ( sweet paprika)
  • 1/2 fresh tomoato
  • 3 tbs peccorino or parmesan cheese
  • 4 leaves of fresh basil
  • 1 tbs of olive oil
  • salt to taste
