Ingredients
- 2 sm leeks or 1 lg leek, white & pale green parts only, cut in half, rinsed well and sliced into thin slices (rinse again if theyâre extremely gritty)
- 1 TB butter
- 2 shallots, minced
- 1 ½ C brown basmati rice, rinsed
- ¼ tsp salt
- ¼ tsp fresh ground pepper
- 3 C clam juice, seafood broth or vegetable broth
- 1 LB fresh asparagus, trimmed, cut on angle into 1â pieces
- 1 LB lump crab meat (I use king crab leg meat and it works just fine!)
- 2 TB minced fresh tarragon or dill (depends on your taste preference)
- 1 lemon, cut into wedges to serve with pilaf
