Ingredients
- For Salad
- 2 cups cooked white rice, warm or room temp, but not cold, with about 2t rice vinegar mixed in
- 4oz cooked crab meat
- 1/2 medium cucumber, sliced or match sticked(I don't peel)
- 1/2-1 avocado, diced
- 4oz cream cheese, cubed
- 1/2 cup bean sprouts(have nothing to do with California rolls...I just love them, so I added them :)
- kosher or sea salt and fresh ground black pepper
- couple T sesame seeds(optional)
- Creamy wasabi ginger Dressing*
- 1t soy sauce(I used Dales sauce...similar, but not pure soy sauce)
- 1-3t prepared wasabi(to taste)
- 3T rice vinegar
- 2T mirin(or sub sweet white wine)
- 2T mayonnaise
- 1T Dijon
- dash of sesame oil
- 1/4t fresh grated ginger
- kosher or sea salt and fresh ground black pepper
- (if a sweeter dressing is desired, you can add a touch of honey a lil at at time..if using mirin, it probably won't be necessary)
- *if you don't like wasabi, you won't like this dressing, most likely...but, you can use a creamy avocado dressing or a ginger vinaigrette, instead, if you'd like!
