Albondigas Soup Recipe


  • 4 lbs lean ground beef
  • 2 cups wheat germ
  • 8 T extra virgin olive oil
  • 1 t seasoned salt
  • 3 t oregano
  • 2 t dried parsley
  • 2 t marjoram
  • 1 t pureed garlic
  • 6-8 carrots peeled and sliced
  • 4-6 stalks of celery, cleaned and sliced
  • 8 zucchini, washed and sliced
  • 6 medium potatoes, peeled and cubed in bite sized pieces
  • 2 cups of La Victoria or Ortega mild salsa
  • seasoned salt to taste for broth
