- 1 cup thin sliced carrots cut diagonally
- * you can add fresh broccoli and sugar snap peas if desired
- 1 thin sliced clove garlic
- 1 can coconut milk
- 4 tablespoons soy sauce
- 2 tablespoons curry paste or 1 1/2 teaspoons curry powder
- 4 teaspoons Chinese rice vinegar or cider vinegar
- 6 teaspoons vegetable oil, divided
- 4 teaspoons cornstarch dissolved in 3 tablespoons cold water
- 4 tablespoons dark brown sugar
