Sweet Tea Pie Recipe

Ingredients

  • 2 cups sugar
  • 1 cup (2 sticks) unsalted butter, at room temperature
  • Grated zest of 1 lemon
  • 8 large egg yolks
  • 2/3 cup strongly brewed black tea (Martha uses orange pekoe)
  • 1 tbs vanilla extract
  • 1/2 tsp fresh lemon juice
  • 1/2 tsp cider vinegar
  • 2 tbs all-purpose flour
  • 2 tsp cornmeal
  • candied lemon peel and fresh mint leaves for garnish (optional)
  • Pie Crust:
  • 2 cups White Lily all-purpose flour (or 1 1/2 cups all-purpose flour and 1/2 cup cake flour if not using White Lily)
  • 1 tsp kosher salt
  • 1 tsp sugar
  • 3/4 cup (1 1/2 sticks) cold butter cut into pieces
  • 1/4 cup cold vegetable shortening or lard, cut into pieces
  • Up to 1/4 cup ice-cold water
