Ingredients
- 2 cups sugar
- 1 cup (2 sticks) unsalted butter, at room temperature
- Grated zest of 1 lemon
- 8 large egg yolks
- 2/3 cup strongly brewed black tea (Martha uses orange pekoe)
- 1 tbs vanilla extract
- 1/2 tsp fresh lemon juice
- 1/2 tsp cider vinegar
- 2 tbs all-purpose flour
- 2 tsp cornmeal
- candied lemon peel and fresh mint leaves for garnish (optional)
- Pie Crust:
- 2 cups White Lily all-purpose flour (or 1 1/2 cups all-purpose flour and 1/2 cup cake flour if not using White Lily)
- 1 tsp kosher salt
- 1 tsp sugar
- 3/4 cup (1 1/2 sticks) cold butter cut into pieces
- 1/4 cup cold vegetable shortening or lard, cut into pieces
- Up to 1/4 cup ice-cold water
