Ingredients
- 3lbs lamb chops or boneless leg steaks, or venison steaks
- 4T olive oil, divided
- 2T butter
- 3 cloves garlic, minced
- 4 springs fresh rosemary
- juice from 1 lemon
- 1T Dijon
- kosher or sea salt and fresh ground black pepper(plenty of this :)
- 1lb baby red potatoes(as small as you can find to ensure tender finished taters :)
- 1lb baby carrots
- 12oz baby bellas
- about 1lb pearl onions, whole, peeled
- and any combo of the following to make up about 2-3 more cups of veggies: baby squash or zucchini, haricot verts (baby green beans), Brussels sprouts
- 2t baking soda
- 1/2 cup white wine
