Guilt-free Muffins Recipe

Ingredients

  • 2 c bran (bran cereal, bran germ…whatever)
  • 1½ c nonfat yogurt (flavour of your choice…we like Yoplait fat free vanilla)
  • 3 c flour*
  • 3 T baking powder
  • 1 t baking soda
  • Pinch of salt
  • 1 1/2 c Splenda® (or regular, lightly packed brown sugar)
  • 2 granny smith apples (peeled, cored, diced or shredded)
  • ½ c whole, raw cashews (or any other nut you prefer)
  • ½ c whole, raw sunflower seeds
  • 1 c raisins
  • ½ c unsweetened cranberries
  • 2 eggs (or 3 egg whites)
  • ¼ c olive oil
  • 1¾ c 1% (or skim) milk

These Muffins Are A Great Snack Or Breakfast And They Are Totally Guilt Free. A Family Favorite Developed After Being Challenged To Make A Healthy Version Of My Famous Giant Muffins.
