  • 51/2 oz/150 g generous 3/4 cup superfine sugar
  • 1 tsp finely grated lemon rind
  • pinch of salt
  • 150g unsalted butter, chilled and cut into small dice
  • 1 medium egg, beaten lightly
  • 1 tbsp chilled water
  • FILLING
  • 175g unsalted butter (at room temp)
  • 175g superfine sugar
  • 3 large eggs
  • 1.1/2 cups finely ground almonds
  • 2 tbsp all-purpose flour
  • 1 tbsp grated lemon rind
  • 1/2 tsp almond extract
