Grilled Chicken Salad With Black Beans And Barbecue Ranch Dressing Recipe

Ingredients

  • 2 cups peeled, seeded, and sliced cucumber (about 2 cucumbers)
  • 1/4 cup white wine vinegar
  • 1/4 tsp salt
  • 1/4 tsp freshly ground black pepper
  • BEANS:
  • 1- 15oz can black beans, drained and rinsed well
  • 1/4 cup stemmed, seeded, deveined, and diced red bell pepper
  • 1/4 cup stemmed, seeded, deveined, and diced, orange bell pepper
  • 1/4 cup stemmed, seeded, deveined, and diced yellow bell pepper
  • 1/4 cup diced red onion
  • 1/4 cup chopped fresh Italian flat-leaf parsley
  • 1/4 cup fresh lime juice (about 2 medium limes)
  • 1/4 cup olive oil
  • 1/2 tbs dried oregano
  • 1/2 tbs honey
  • 1/2 tbs ground cumin
  • BARBECUE RANCH DRESSING:
  • 1/3 cup barbecue sauce
  • 1/3 cup mayonnaise
  • 1/3 cup nonfat yogurt
  • 1/3 cup buttermilk
  • 1 tbs white wine vinegar
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp cayenne pepper
  • 1/4 tsp paprika
  • 2 tbs chopped chives
  • 2 tbs fresh Italian flat-leaf parsley
  • SALAD:
  • 4 cups torn romaine lettuce leaves (about 5 oz)
  • 2 medium vine-ripened tomatoes, quartered
  • 1/2 cup thawed frozen corn or fresh cooked corn kernels
  • 2 cups 1-inch piece of warm grilled, rotisserie, or fried chicken
