- 1/4 cup white wine vinegar
- 1/4 tsp salt
- 1/4 tsp freshly ground black pepper
- BEANS:
- 1- 15oz can black beans, drained and rinsed well
- 1/4 cup stemmed, seeded, deveined, and diced red bell pepper
- 1/4 cup stemmed, seeded, deveined, and diced, orange bell pepper
- 1/4 cup stemmed, seeded, deveined, and diced yellow bell pepper
- 1/4 cup diced red onion
- 1/4 cup chopped fresh Italian flat-leaf parsley
- 1/4 cup fresh lime juice (about 2 medium limes)
- 1/4 cup olive oil
- 1/2 tbs dried oregano
- 1/2 tbs honey
- 1/2 tbs ground cumin
- BARBECUE RANCH DRESSING:
- 1/3 cup barbecue sauce
- 1/3 cup mayonnaise
- 1/3 cup nonfat yogurt
- 1/3 cup buttermilk
- 1 tbs white wine vinegar
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 tsp cayenne pepper
- 1/4 tsp paprika
- 2 tbs chopped chives
- 2 tbs fresh Italian flat-leaf parsley
- SALAD:
- 4 cups torn romaine lettuce leaves (about 5 oz)
- 2 medium vine-ripened tomatoes, quartered
- 1/2 cup thawed frozen corn or fresh cooked corn kernels
- 2 cups 1-inch piece of warm grilled, rotisserie, or fried chicken
