Ingredients
- 1 kg shoulder, 2 pieces.
- 1 big onion chopped.
- 8 small sweet carrots.
- 1 medium celery root, cut in 2 cm cubes.
- 8 Brussels sprouts.
- sea salt.
- 1 bouquet garni ( 15 grains white pepper, 3 cloves garlic,1 bay leave, 10 coriander seeds, 2 grains all spice crushed, 1 sprig thyme, 1 ts dried thyme, 3 cloves) , (put in a pices of tulle fastened with cooking thread.
- 1/4 ts ground nutmeg.
- salt and pepper to taste.
- 450 gr apples Granny smith peeled cut in cubes ( keep the peel).
- 5 cm pipe cinnamon.
- 1 ts sugar.
- juice of 1 lemon.
- 1 clove.
- 3 tbs horseradish.
- salt and pepper to taste.
