  • 2 teaspoons Dijon mustard

  • 2 cloves garlic, smashed to a paste

  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon cayenne pepper
  • 1 1/2 pounds fresh tuna
  • 1/4 cup chopped fresh flat-leaf parsley, plus whole leaves for serving
  • Zest of 1 lemon
  • Kosher salt and freshly ground black pepper
