  • 3 tablespoons butter, cut into pats

  • Large bundle arugula, watercress, or spinach, washed and trimmed
  • Freshly ground black pepper
  • Grated nutmeg
  • Parmigiano-Reggiano cheese, for garnish
  • A handful fresh flat-leaf parsley or celery greens, chopped, for garnish
