Ingredients

Shrimp:

  • 2cups water
  • 14cup chopped fresh ginger, with peel
  • 3tablespoons kosher salt
  • 2tablespoons dark brown sugar
  • 2cloves garlic, peeled and smashed
  • 1tablespoon pickling spice
  • 112pounds medium shrimp, peeled and deveined

Salad:

  • 2medium grapefruit
  • 8thin slices fresh ginger
  • 14cup extra-virgin olive oil, plus additional for brushing
  • 1tablespoon white wine vinegar
  • 112teaspoons soy sauce
  • 1teaspoon honey
  • 12teaspoon salt, plus additional for seasoning
  • Freshly ground black pepper
  • 2heads Bibb or Boston lettuce, trimmed, leaves torn into pieces
  • 12large fresh basil leaves, torn
  • 1small serrano chile, minced (leave the seeds in for more heat)
  • 2Hass avocados, halved, pitted, peeled, and sliced
