- 2 to 3 (3 pound) pumpkins or winter squash, such as Hubbard or Kabocha
- 3 tablespoons unsalted butter
- 1/4 cup vegetable oil
- 1 1/2 pounds turkey thigh meat, cut into 1 inch cubes
- 1 large onion, finely chopped
- 2 Poblano chiles, seeded and diced
- 1 teaspoon coarse salt
- 1/2 teaspoon freshly ground black pepper
- 1 large tomato, seeded and finely diced
- 1 1/2 cups dry white wine
- 3 1/2 to 4 cups chicken stock
- 1/2 pound potatoes, peeled and cut into 1 inch cubes
- 1/2 pound parsnips, peeled and cut into 1 inch cubes
- 1 cup corn kernels (about 2 ears)
- 2 large pears, peeled and cut into 1 inch cubes
- 6 dried apricots, quartered, soaked in cold water for 20 minutes and drained.
- 1 tablespoon chopped chives
- 1/2 cup long grain white rice, soaked for 1 hour and drained
