- 3 cups, cooked black-eyed peas
- 1/2 cup finely sliced green onion
- 1/3 cup small diced red peppers
- 1/2 teaspoon ground cumin
- 1 teaspoon Creole seasoning (recommended: Crescent City Grill)
- 1 egg
- 1/4 cup shredded Romano
- 1 cup finely ground bread crumbs
- 2 to 3 tablespoons clarified butter
- 1/2 cup seasoned flour
Frisee Salad:
- 1/3 cup extra-virgin olive oil
- 1/4 cup shallot, finely minced
- 1 1/2 tablespoon balsamic vinegar
- 1 teaspoon Creole mustard
- 1 teaspoon fresh chopped thyme leaves
- 1/4 teaspoon fresh ground black pepper
- 1 teaspoon salt
- 1 1/2 cups frisee
- 3 tablespoons cooked and diced applewood smoked bacon
Smoked Tomato Couilis:
- 1 tablespoon olive oil
- 1/4 cup shallots, minced
- 1 teaspoon garlic, minced
- 1 teaspoon kosher salt
- 1/8 teaspoon cayenne pepper
- 4 ripe tomatoes, smoked, peeled, seeded and roughly chopped
- 2 teaspoons balsamic vinegar
