Ingredients

  • 3 tablespoons butter
  • 1 small sweet apple, such as Fuji, peeled, cored and chopped
  • 1 tablespoon apple cider vinegar
  • 1/4 cup apple cider or unsweetened apple juice
  • 1/2 cup olive oil
  • 1/4 cup vegetable oil
  • 4 thick (6-inch) skewers
  • 4 large strips applewood smoked bacon
  • 1/2 pound chicken livers, separated, drained and patted dry
  • 1 cup all-purpose flour
  • 1 tablespoon Essence, recipe follows
  • 1/4 teaspoon freshly ground black pepper
  • 6 cups baby spinach, stems removed, washed and spun dry
  • 1/4 cup thinly sliced shallot rings
  • 4 ounces goat cheese, crumbled
