- 1/2 cup red wine
- 3 cups veal stock
- 2 large tomatoes, peeled, seeded, cored and chopped
Grits:
- 1 tablespoon unsalted butter
- 1/2 yellow onion, cut into a very small dice
- 8 cups skim milk
- 1/2 teaspoon kosher salt
- Freshly ground pepper
- 2 cups stone-ground grits
- 3 tablespoons chopped thyme leaves
- 1 bunch green onions, thinly sliced
