  • 4 sprigs fresh thyme
  • 2 medium yellow onions, peeled and halved
  • 3 medium carrots, peeled and halved lengthwise
  • 2 medium shallots, peeled and halved
  • 1/2 medium orange
  • 3 bay leaves
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground allspice
  • 1/2 cup dry white wine
  • 6 cups chicken stock
  • 1/2 cup fresh orange juice
  • 1/4 cup plus 1 tablespoon dark brown sugar
  • 1 tablespoon plus 1 teaspoon balsamic vinegar
  • 1/4 cup heavy cream
