Mocha Blackout Cake

Ingredients

For the cake:

  • Butter, for pans
  • 1 1/2 cups unsweetened cocoa powder, plus more for dusting pans
  • 2 1/2 cups all-purpose flour
  • 2 tablespoons instant espresso powder
  • 2 teaspoons baking soda
  • 1 1/2 teaspoons baking powder
  • 2 cups granulated sugar
  • 2/3 cup vegetable oil
  • 3 large eggs
  • 2 teaspoons pure vanilla extract
  • 1 1/2 teaspoons table salt
  • 1 cup whole milk
  • 1 cup strong brewed coffee

For the pudding:

  • 1 cup granulated sugar
  • 3 tablespoons cornstarch
  • 2 tablespoons unsweetened cocoa powder
  • 2 tablespoons instant espresso powder
  • 1/2 teaspoon table salt
  • 2 1/2 cups whole milk
  • 1 tablespoon vanilla extract
  • 3 large egg yolks
  • 4 ounces semisweet chocolate, finely chopped
  • 2 tablespoons unsalted butter, cut into pieces
  • 1 box chocolate wafers, crushed to crumbs (about 2 cups) (recommended: Nabisco Famous Chocolate Wafers)

For the whipped cream:

  • 1 cup whipping cream
  • 1 to 2 tablespoons dark rum
