- 1 1/2 teaspoons baking powder
- 2 cups granulated sugar
- 2/3 cup vegetable oil
- 3 large eggs
- 2 teaspoons pure vanilla extract
- 1 1/2 teaspoons table salt
- 1 cup whole milk
- 1 cup strong brewed coffee
For the pudding:
- 1 cup granulated sugar
- 3 tablespoons cornstarch
- 2 tablespoons unsweetened cocoa powder
- 2 tablespoons instant espresso powder
- 1/2 teaspoon table salt
- 2 1/2 cups whole milk
- 1 tablespoon vanilla extract
- 3 large egg yolks
- 4 ounces semisweet chocolate, finely chopped
- 2 tablespoons unsalted butter, cut into pieces
- 1 box chocolate wafers, crushed to crumbs (about 2 cups) (recommended: Nabisco Famous Chocolate Wafers)
For the whipped cream:
- 1 cup whipping cream
- 1 to 2 tablespoons dark rum
