  • 1 small white onion, finely diced, divided

  • 1 small celery stalk, finely diced
  • 1 teaspoon tomato paste
  • 1 quart water
  • 1 small bay leaf
  • 1 teaspoon lightly crushed black peppercorns
  • 4 tablespoons butter, plus 1 stick cold butter cut into tablespoon size pieces
  • 1 tablespoon chopped garlic
  • 1/2 teaspoon ground cumin
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • 1/2 teaspoon ground red pepper flakes
  • 1 teaspoon paprika
  • 1/4 lemon, juiced
  • 1 bottle beer (recommended: Abita)
  • Hot sauce, to taste
  • 1/4 cup sliced green onion
