Sauteed Quail Salad

Ingredients

Dressing:

  • 2 egg yolks*
  • 1 cup white wine
  • 2 bunches cilantro, blanched
  • 4 to 5 cloves garlic, minced
  • 1/4 rice wine vinegar
  • 4 scallions, minced
  • 2 teaspoons sugar
  • Salt and pepper
  • 1 1/2 cups extra-virgin olive oil

Quail marinade:

  • 3 cloves garlic, minced
  • 2 tablespoons chopped thyme
  • 1/2 cup balsamic vinegar
  • 1/4 cup white wine
  • Salt and pepper
  • 4 quails
  • 2 tablespoons butter
  • 2 tablespoons oil

Salad:

  • 1 head romaine lettuce, cleaned and cut into bite-sized pieces
  • 2 handfuls spring mix
  • 1 tomato, diced
  • 1 onion, julienned
  • 1 tablespoon chopped cilantro leaves
  • 4 to 5 scallions, sliced, for garnish
