- 1 (1 1/2 to 2-pound) pork loin
- Kosher salt and freshly ground black pepper
- 4 to 5 fresh sage leaves
- 2 teaspoons chopped fresh thyme
- 2 tablespoons chopped garlic
Apple Cider Gravy:
- 2 tablespoons unsalted butter
- 6 to 7 tablespoons all-purpose flour
- 1 cup apple cider
- 2 cups chicken broth
- 1/2 large lemon
- Kosher salt and freshly ground black pepper
- 4 to 5 torn tarragon leaves
- About 1/4 cup (or less) heavy whipping cream
- Thyme sprigs and lemon wedges, for garnish
- Cous cous and asparagus, for serving
