Pork:

  • 1 (1 1/2 to 2-pound) pork loin
  • Kosher salt and freshly ground black pepper
  • 4 to 5 fresh sage leaves
  • 2 teaspoons chopped fresh thyme
  • 2 tablespoons chopped garlic

Apple Cider Gravy:

  • 2 tablespoons unsalted butter
  • 6 to 7 tablespoons all-purpose flour
  • 1 cup apple cider
  • 2 cups chicken broth
  • 1/2 large lemon
  • Kosher salt and freshly ground black pepper
  • 4 to 5 torn tarragon leaves
  • About 1/4 cup (or less) heavy whipping cream
  • Thyme sprigs and lemon wedges, for garnish
  • Cous cous and asparagus, for serving
