Grilled Atlantic Salmon with Squash and Apple Chutney

Ingredients

For the chutney

4 Gala apples, cut into 1/4 inch dice
1/2 lemon, juiced
1 tablespoon butter
1 shallot, minced
pinch nutmeg
2 teaspoons brown sugar
For the salmon

1 delicata squash (or butternut squash)
2 tablespoons olive oil
16 ounces Atlantic salmon, cut into 4 steaks
1 clove garlic
2 tablespoons pumpkin seeds, toasted
3 cups baby spinach
2 tablespoons Austrian toasted pumpkin seed oil (optional)
1 tablespoon fresh thyme leaves
