Ingredients

  1. 1/2 cup fregola (see Note)
  2. 3 cups hot water
  3. 1 pound ground pork
  4. 1/4 cup minced shallots
  5. 2 teaspoons kosher salt
  6. 1/2 teaspoon freshly ground pepper
  7. 1 teaspoon finely chopped marjoram or oregano plus 4 marjoram or oregano sprigs
  8. Pinch of cinnamon (optional)
  9. 40 brined grape leaves, drained (from one 16-ounce jar)
  10. 1/2 cup fresh lemon juice
  11. 2 tablespoons extra-virgin olive oil
