Ingredients

  1. 2 tablespoons unsalted butter
  2. 1 tablespoon vegetable oil
  3. 5 pounds pork shoulder, trimmed and cut into 5 equal pieces
  4. Salt and freshly ground pepper
  5. 5 garlic cloves
  6. 2 large onions, coarsely chopped
  7. 3 thyme sprigs
  8. 1 bay leaf
  9. 2 cups chicken stock
  10. Chimichurri sauce (see Note)
