Fennel and Sausage Risotto

Ingredients

  1. 3 tablespoons extra-virgin olive oil
  2. 1 pound sweet Italian sausage, casings removed, meat crumbled
  3. 1 large fennel bulb, halved, cored and thinly sliced
  4. 5 1/2 cups chicken stock, preferably homemade
  5. 1 small onion, finely chopped
  6. Salt and freshly ground pepper
  7. 1 1/2 cups arborio rice (10 ounces)
  8. Pinch of saffron threads
  9. 1/2 cup dry white wine
  10. 1/2 cup freshly grated Pecorino-Romano cheese
  11. 1 tablespoon unsalted butter
  12. 2 tablespoons chopped flat-leaf parsley
