Ingredients

  1. 3 tablespoons extra-virgin olive oil
  2. 4 ounces thick-cut bacon, diced
  3. 1 large onion, thinly sliced
  4. 1 leek, white and tender green parts, thinly sliced
  5. 1/2 cup dry white wine
  6. 6 parsley sprigs
  7. 6 thyme sprigs
  8. 1 bay leaf
  9. 1 pound small red potatoes, thinly sliced
  10. 6 cups chicken stock
  11. 1 pound green cabbage, finely shredded (4 cups)
  12. Salt and freshly ground pepper
  13. 2 tablespoons snipped chives
  14. Three 1/2-inch-thick slices of country bread, cut into cubes
  15. 2 garlic cloves, lightly smashed
  16. 2 tablespoons minced parsley
