Apricot, Almond and Brown Butter Tart

Ingredients

TART SHELL

  1. 2 cups all-purpose flour, plus more for dusting
  2. 1 tablespoon sugar
  3. 1/2 teaspoon salt
  4. 1 1/2 sticks (12 tablespoons) chilled unsalted butter, diced
  5. 5 tablespoons ice water
  6. 1/4 teaspoon pure vanilla extract

FILLING

  1. 3/4 cup slivered almonds
  2. 2 cups dry white wine
  3. 2 cups dried apricots (10 ounces)
  4. 1 stick unsalted butter
  5. 1 vanilla bean—halved lengthwise, seeds scraped and reserved
  6. 1 3/4 cups confectioners’ sugar
  7. 3/4 cup all-purpose flour
  8. 1 teaspoon salt
  9. 4 large eggs
  10. 1/4 teaspoon pure almond extract
  11. Sweetened whipped cream, for serving
