Poached Shrimp, Melon and Fris e Salad

Ingredients

  1. 2 small fennel bulbs, thinly sliced
  2. 1 small leek, white and tender green part only, thinly sliced
  3. 3 garlic cloves
  4. 1 teaspoon fennel seeds
  5. 1 teaspoon coriander seeds
  6. 1 teaspoon black peppercorns
  7. Finely grated zest and juice of 1 medium orange
  8. 1 cup dry white wine
  9. 3 cups water
  10. Kosher salt
  11. 1 1/2 pounds large shrimp, shelled and deveined
  12. 3 tablespoons extra-virgin olive oil
  13. 1 tablespoon white balsamic vinegar
  14. Piment d’Espelette (see Note)
  15. 1 1/2 cups finely diced cantaloupe (1/2 pound)
  16. 1 1/2 cups finely diced honeydew (1/2 pound)
  17. 1 small head of frisée, tender inner leaves only, chopped
  18. 1 tablespoon chopped tarragon
