  4. 1/2 cup shredded sharp cheddar
  5. Salt and freshly ground pepper
  6. Tabasco
  7. 2 tablespoons vegetable oil, plus more for brushing
  8. 4 ounces lean bacon, cut into 1/2-inch dice
  9. 2 small shallots, minced
  10. 1 small celery rib, minced
  11. 1 scallion, finely chopped
  12. 1/2 red bell pepper, minced
  13. 1 tablespoon chopped parsley
  14. 1 teaspoon chopped thyme
  15. 1/4 cup balsamic vinegar
  16. 2 tablespoons Dijon mustard
  17. 1 tablespoon Worcestershire sauce
  18. Barbecue spice mix or Cajun seasoning, for dusting
  19. 1 pound large shrimp, shelled and deveined
