- 1gallon water
- 1/2cup kosher salt
- 1/4cup sweet paprika
- 1teaspoon cayenne pepper
- 1teaspoon garlic powder
- 1/4cup fresh lemon juice
- 4bay leaves
- 1small onion, sliced 1/4 inch thick
- 1head of garlic, halved crosswise
- 1large thyme sprig
- 1tablespoon black peppercorns
- 1tablespoon ground coriander
- 24jumbo shrimp, shells cut down the back and veins removed
- 6cups baby arugula leaves or mâche
