Ingredients

  5. 3 bay leaves
  6. 8 cups water
  7. 1 tablespoon ground cumin
  8. 1 tablespoon soy sauce
  9. 1 small onion, halved, plus 4 medium onions, halved and thinly sliced
  10. 2 garlic cloves, crushed
  11. 2 thyme sprigs
  12. One 3 1/4-pound bone-in, center-cut pork roast (about 4 ribs), cut through the chine bone
  13. 1 tablespoon vegetable oil
  14. Pinch of ground cloves
  15. Kosher salt and freshly ground pepper
  16. 1/4 cup dark brown sugar
  17. 2/3 cup balsamic vinegar
  18. 1 1/2 teaspoons orange zest
