Roasted Turkey with Tangerine Glaze

Ingredients

TURKEY

  1. One 18-pound turkey, neck reserved
  2. Salt and freshly ground pepper
  3. 2tablespoons vegetable oil, plus more for rubbing
  4. 2quarts chicken stock or low-sodium broth
  5. 1medium onion, coarsely chopped
  6. 1large carrot, coarsely chopped
  7. 1large celery rib, coarsely chopped
  8. 1/2cup all-purpose flour

GLAZE

  1. 3cups plus 3 tablespoons fresh tangerine or orange juice (about 6 large tangerines or 6 large navel oranges)
  2. 1tablespoon finely grated fresh ginger
  3. 1tablespoon light brown sugar
  4. 2tablespoons cornstarch
  5. 1tablespoon minced sage
  6. Salt
