Eight-Treasure Stir-Fry

Ingredients

  1. 1/2 cup plus 1 tablespoon boiling water
  2. 1 teaspoon loose tea, preferably Longjing
  3. 1/3 cup dried wood ear mushrooms (1/4 ounce)
  4. 3 tablespoons vegetable oil
  5. 8 shiitake mushrooms, stems discarded, caps thinly sliced
  6. 1 long, thin green chile, split lengthwise, seeded and thinly sliced crosswise
  7. Salt and freshly ground pepper
  8. 4 scallions, thinly sliced crosswise
  9. 1 small Granny Smith apple—peeled, cored and sliced 1/8 inch thick
  10. One 14-ounce can whole straw mushrooms, drained and rinsed
  11. 8 ounces firm tofu, sliced 1/3 inch thick and cut into 1-inch strips
  12. 1 cup mung bean sprouts (3 ounces)
