Broccoli and Wild Mushroom Casserole

Ingredients

  1. 3/4pound mixed wild mushrooms, such as cremini and shiitake, stemmed and quartered
  2. 1stick unsalted butter, plus 1 tablespoon melted
  3. 1large onion, minced
  4. 4large celery ribs, finely diced
  5. 3tablespoons all-purpose flour
  6. 1cup chicken stock or low-sodium broth
  7. 1/4 cup milk
  8. Salt and freshly ground pepper
  9. 1cup mayonnaise
  10. 2 1/2pounds broccoli—heads cut into 1-inch florets, stems peeled and cut into 1/2-inch dice
  11. 1 1/2cups coarsely shredded sharp cheddar cheese (6 ounces)
  12. 1 1/3cups crumbled Ritz crackers (from 1 sleeve, about 35 crackers)
