Leeks Romesco with Crumbled Garrotxa Cheese

Ingredients

  1. 1 small red bell pepper
  2. 1/2 cup plus 2 tablespoons extra-virgin olive oil, plus more olive oil for brushing
  3. 1/4 cup blanched whole unsalted almonds
  4. 1/2 cup cubed firm-textured white bread without crusts (1/4 inch)
  5. 2 garlic cloves, smashed
  6. 2 plum tomatoes—peeled, seeded and coarsely chopped
  7. 3 tablespoons sherry vinegar
  8. Salt and cayenne pepper
  9. 6 medium leeks, white and tender green parts only, halved lengthwise
  10. 1/4 cup chicken stock or low-sodium broth
  11. 4 ounces crumbled Garrotxa or other tangy, semi-aged, goat's-milk cheese (1 cup)
  12. Crusty sourdough bread, for serving
