Ingredients

  1. 3tablespoons vegetable oil
  2. 1/2pound shiitake mushrooms, stems discarded and caps quartered
  3. 1/4cup plus 1 tablespoon Shaoxing wine (see p. 248) or dry sherry
  4. 3/4pound ground pork
  5. 1/4cup plus 2 tablespoons kecap manis
  6. Salt
  7. 1teaspoon Asian sesame oil
  8. 1pound dried pearl noodles or frozen rice cakes
  9. 6ounces Chinese sausage, thinly sliced
  10. 6ounces snow pea shoots or 1 bunch watercress, thick stems discarded
  11. 3/4cup chicken stock
  12. 1/4cup black vinegar
  13. 1tablespoon soy sauce
  14. 1tablespoon Asian fish sauce
  15. 8large eggs
  16. 1/2cup cilantro leaves
  17. 1/4cup chopped pickled mustard greens
