- 2 pounds mussels, scrubbed and debearded
- 1/2 pound sea beans (see Note), soaked in cool water for 30 minutes and drained, or thin green beans
- 1/4 cup extra-virgin olive oil
- 2 tablespoons white wine vinegar
- 2 teaspoons minced tarragon
- 1/2 teaspoon Dijon mustard
- Salt and freshly ground pepper
- 2 cups shredded romaine lettuce
