Yellow Tomato Pozole Stew

Ingredients

STEW

  1. 4 large yellow tomatoes
  2. 1 tablespoon olive oil
  3. 1 poblano pepper, stem and seeds removed, cut into large dice
  4. 1 large onion, cut into large dice
  5. 1 cup celery, cut into large dice
  6. 3 cloves garlic, minced
  7. 1 jalapeño, cut into small dice
  8. 2 teaspoons ground cumin
  9. 2 teaspoons ground coriander
  10. 1/4 cup gold tequila
  11. 1/2 cup beer
  12. 2 cups rich chicken stock
  13. 4 corn tortillas, fried
  14. salt to taste
  15. black pepper to taste
  16. lime juice to taste

GARNISH

  1. 1 tablespoon olive oil
  2. 1/4 cup country ham, cut into small dice
  3. 1/2 cup sweet corn kernels
  4. 1/4 cup red onion, cut into small dice
  5. 1/4 cup celery, cut into small dice
  6. 1 tablespoon jalapeño, cut into fine dice
  7. 3/4 cup pozole, cooked
  8. 1/4 cup yellow tomato, cut into small dice
  9. 1/4 cup red tomato, cut into small dice
