Ingredients

  1. 2 tablespoons olive oil
  2. 1 onion, chopped
  3. 2 red bell peppers, diced
  4. 1 1/2 teaspoons salt
  5. 3 cloves garlic, minced
  6. 1/3 cup dry sherry
  7. 1 cup bottled clam juice
  8. 1/4 cup blanched slivered almonds
  9. 1/2 teaspoon fresh-ground black pepper
  10. 2 pounds monkfish, membranes removed, fish cut to make 4 pieces
  11. 2 tablespoons chopped fresh parsley
