Sesame Noodles with Prosciutto

Ingredients

  1. 3/4 pound dried chow mein noodles or thin spaghetti
  2. 1 tablespoon Asian sesame oil
  3. 2 tablespoons peanut oil
  4. 1 large garlic clove, minced
  5. 1/4 cup chunky peanut butter, preferably natural
  6. 1 tablespoon balsamic vinegar
  7. 1 tablespoon soy sauce
  8. 2 teaspoons finely grated fresh ginger
  9. 2 teaspoons sugar
  10. 1/2 teaspoon crushed red pepper
  11. 1/4 cup chicken stock or low-sodium broth
  12. Salt
  13. 1 1/2 ounces prosciutto, sliced 1/8 inch thick, cut into matchsticks
  14. 1 scallion, thinly sliced
  15. 1 Kirby cucumber—peeled, seeded and cut into matchsticks
