  4. 1 1/2 teaspoons salt
  5. 1 clove garlic, minced
  6. 1 2/3 cups tomato puree (one 15-ounce can)
  7. 1/2 cup water
  8. 1/4 teaspoon fresh-ground black pepper
  9. 1 tablespoon butter
  10. 1 tablespoon chopped fresh basil or parsley
  11. 3/4 cup ricotta
  12. 1/4 cup grated Parmesan
  13. 2 eggs, beaten to mix
  14. Grated zest of 1 lemon
  15. 1/8 teaspoon grated nutmeg
  16. 1/16 teaspoon cayenne
  17. 3 tablespoons flour
