Poached Sea Bass with Lemon Butter

Ingredients

  1. 1 quart water
  2. 2 cups Vinho Verde or other dry white wine
  3. 1 large leek, split lengthwise and thinly sliced crosswise
  4. 1 large carrot, thinly sliced
  5. 1 bay leaf
  6. Salt and freshly ground pepper
  7. Eight 4-ounce sea bass or cod fillets with skin
  8. 4 tablespoons unsalted butter
  9. 3 tablespoons fresh lemon juice
  10. 2 hard-cooked eggs, chopped
  11. 2 tablespoons chopped parsley
  12. 2 tablespoons chopped chives
