Moussaka with Yogurt Béchamel

Ingredients

  1. 2 tablespoons unsalted butter
  2. 1/3 cup all-purpose flour
  3. 1 1/2 cups heavy cream
  4. 1 1/2 cups whole milk
  5. 2 1/2 large onions, 2 diced
  6. 1 bay leaf
  7. 2 whole cloves
  8. 1/2 cup plain whole milk yogurt
  9. Freshly grated nutmeg
  10. Salt and freshly ground pepper
  11. 1/4 cup dried currants
  12. 6 tablespoons extra-virgin olive oil, plus more for brushing
  13. 1 pound ground beef
  14. 1 pound ground lamb
  15. 3 1/2 tablespoons ras el hanout (see Note)
  16. 2 tablespoons plus 1/2 teaspoon cinnamon
  17. 1 teaspoon crushed red pepper
  18. 6 garlic cloves, thinly sliced
  19. 2 cups dry red wine
  20. One 28-ounce can whole tomatoes, chopped, juices reserved
  21. 2 medium eggplants peeled and sliced lengthwise 1/2 inch thick
  22. 2 green bell peppers, diced
  23. 2 cups grated Parmesan cheese
