  2. 2 tablespoons finely julienned lemon zest
  3. Six 5-ounce red snapper fillets, with skin
  4. 1 small onion, finely chopped
  5. 1/2 cup fresh lemon juice
  6. 2 tablespoons dry sherry
  7. 1 tablespoon olive oil
  8. 1/2 teaspoon kosher salt
  9. 1/2 teaspoon coarsely ground pepper
  10. 2 teaspoons minced fresh chives
